If you are looking for a light, delicious and protein filled meal, then you will thoroughly enjoy this Chicken Foo Yung recipe. The dish varies somewhat from menu to menu, as does the spelling (sometimes Foo Young, sometimes Fu Yung and sometimes Foo Young), but it is delicious and straightforward to make at home.

What is Chicken Foo Yung made of?
Chicken Foo Young is an egg based dish containing chicken and vegetables which is cooked in oil at high heat to be crispy on the outside and fluffy inside. . Here is a list of ingredients you can use for Chicken Fu Yung:
- 1 cooked chicken breast (shredded or thinly sliced)
- ½ finely sliced red onion
- 1 thinly sliced red pepper
- 5 finely sliced shiitake or enoki mushrooms
- 75g of beansprouts (already boiled according to packet instructions)
- 2-3 finely sliced scallions
- 6 large eggs
- 1 tsp oyster sauce
- 1 tsp shaoxing rice wine or dry sherry
- 2 tsp soy sauce
- a pinch of white pepper (or to taste)
What is the Difference between Foo Yung and Omelette?
While Foo Yung and omelette are similar there are some notable differences as well. Foo Yung is fried at high heat in oil (sometimes deep fried) so that it has a fluffy texture inside and a crispy one outside. It is also served with a gravy, unlike omelette and it contains some ingredients unique to Chinese cooking such as soy sauce, oyster sauce and Shaoxing rice wine.
What does Foo Yung mean in Chinese?
According to Wikipedia Foo Yung means ‘hibiscus egg.’ Hibiscus is a flowering plant which is found all over Asia and could be considered to look like the dish itself which is made from eggs, vegetables and proteins and cooked in a similar way to an omelette.

For the Gravy
Instructions
- Start by cooking all the ingredients for the Chicken Foo Young (except the eggs) in a wok or pan at high heat with a little vegetable or groundnut oil
- Once the chicken and vegetables are stir fried through (about 5 minutes or so) remove from the heat and set aside. Clean the pan or wok in preparation for cooking the foo young
- Make the gravy in the meantime by combining all the gravy ingredients in a small pan and bringing it to the boil then reducing to a simmer for a few minutes to infuse flavour
- While the gravy is simmering place your freshly cleaned wok or pan back on the heat and add a little vegetable oil. Stir in the already cooked vegetables and chicken and then add the eggs
- Turn the heat up to high to get the eggs as crispy as possible (you can also deep fry the egg mixture if desired) and then fold the egg mixture over in half when the eggs are set and crispy enough
- When the Foo Young is cooked through serve it hot on a plate (or 2 plates) with the gravy poured over the top and a few finely chopped scallions
